- Rinse and soak whole black urad and red kidney beans(rajma) overnight in 5 cups of water..
- Drain and rinse again Transfer into a cooker add water add also salt and cook till both the dals are soft and cooked completely..
- Open the lid to see if the rajma is totally soft.Now add milk then boil for 2 minutes..
- Heat butter and oil in a pan and add cumin seeds. When they start to crackle, add cloves, cardamom, bay leaves and sauté now add ginger, garlic paste and onion and sauté till they become golden in colour..
- Add tomatoes and saute for 3-4 minutes..
- Now add red chilli powder, coriander powder,salt and garam masala powder and sauté till the tomatoes are cooked..
- The masalas start releasing oil from sides, add cooked dal and give a good stir. Add curd Mix them and let it simmer for 10 minutes on low heat or more till the dal absorbs flavour and turns thick..
- Garnish with cream. Serve dal makhani with rice or naan..
